Cold Weather Que
I brought a nice barbecue shoulder from Nahunta to the mountain to cook in Sidney R. Pig for dinner tonight. But, with a temperature of 21°F and a stiff wind at daybreak, the weather was not good for que. It was downright cold outside. Nevertheless, I was determined and fired up the pit at about 8:00am. By 11:00 it was warm enough to put in the shoulder. I burned a bunch of oak, maple and hickory down to coals thoughout the day and by mid-afternoon, the pit was finally warm on the outside. Here's what came out of the pit about 7:00pm.
The skin was as good as it gets and when I popped the top, the pulled pork was my best ever cold weather barbecue. We enjoyed it with baked beans and slaw.
