Shelly Beans & Corn

Ah, a dish from my youth!


Shelly beans and corn slow cooked with a bit of fatback and served with tomato wedges and sweetea.

When I was a kid we often didn't have a meat with our meals, particularly in the summertime when fresh fruits and vegetables were available from the garden. This, in fact, was a typically summer supper.

    We are doing well ... now that I'm back on the mountain again.

    We need to get down your way for some of those shrimp and grits and, of course, a Dram Tree Scottish Ale or three at Front Street Brewery.
